JOHNNY MIDNIGHT POT ROST 

 

  • 3-4 lb chuck or boneless round roast 
  • 2 Tb olive oil 
  • 2 onions, chopped 
  • 6-8 carrots, chopped 
  • 4-5 russet potatoes, chopped 
  • 1 C Johnny Midnite Coyote Catsup 
  • 2-2 1/2 C beef broth 
  • 2 Tb brown sugar 
  • 2 Tb apple cider vinegar 
  • 1/4 C flour 
  • 2 tsp salt 
  • 1 tsp pepper 
  1. Preheat oven to 275. Heat large pot or dutch oven over medium-high heat. Add olive oil and let it get really hot
  2. Take 2 C of beef broth and mix with catsup, brown sugar, and vinegar 
  3. Brown onions on both sides in pot, then remove to a plate. Add carrots to pot and toss them around until slightly brown, about a minute or so. 
  4. Remove the carrots and allow pot to become hot again. 
  5. Put flour, salt & pepper in large zip lock bag and add roast to dredge in flour mixture. Sear roast about 1 minute per side and then remove to plate. 
  6. Turn heat to high and deglaze the pot, adding the remaining beef broth and scraping bottom of pan with wooden spoon, making sure to get all the chunks off. Let simmer for about 2 minutes. 
  7. Add meat back to pot, followed by carrots and onions. Pour beef broth/catsup mixture over the meat and vegetables.  
  8. Cover pot and roast for 3-5 hours, depending on the size of your roast. For a 3 lb roast, allow 3-3 1/2 hours. For a 4 -5 lb roast, cook for 4 to 5 hours. 
  9. When cooking time is over, check to see if it is done; insert a fork into meat, the fork should go in very easily and the meat should be very tender.  
  10. Remove to cutting board and slice against the grain. 
  11. Serve and enjoy! 
JOHNNY MIDNIGHT MEATLOAF
  • 1 1/2 lbs ground beef 
  • 1/2 C dry breadcrumbs 
  • 1/2 C onions, chopped 
  • 1 egg 
  • 1/4 C brown sugar 
  • Garlic powder to taste 
  • 1/3 C of your favorite Johnny Midnite Steak Sauce 
  • 1/4 C Wahoo Toppings Pineapple Jalapeno Jam 
  1. Preheat oven to 375 degrees. 
  2. Combine beef, breadcrumbs, onions, egg, and garlic powder and mix well. 
  3. Place mixture in your favorite meatloaf baking pan and place in oven. 
  4. While meatloaf is cooking, stir together Johnny Midnite, brown sugar, and Pineapple Jalapeño Jam. 
  5. Check internal temperature of the meatloaf after approximately 40 minutes. When internal temperature is above 145 degrees, pour jam mixture over meatloaf and continue cooking until internal temperature reaches 160 degrees. 
  6. Let meatloaf sit for about 10 minutes before slicing. 
  7. Serve and enjoy!
