Hi Mountain
Fireside Beef and Wagon Wheel Pasta
- 1lb ground beef
- 2 cups chopped tomatoes
- ¾ tsp Hi Mountain original burger, or substitute cajun cowboy for more spice
- ¼ tsp Hi Mountain garlic pepper rub
- 2 cups cooked wagon wheel pasta
- 2 Tb fresh sliced basil
- 3 Tb fresh grated parmesan
- Brown ground beef in large nonstick skillet over medium heat, about 8-10min
- Break up beef into ½ in crumbles and pour off excess grease
- Stir in tomatoes and seasonings and cook together for 5 minutes on medium heat, stirring occasionally
- Add pasta and basil and toss to combine
- Top with parmesan
Turkey Stir Fry
- 1 lb turkey cut into bite-size pieces
- Hi Mountain sweet honey marinade prepared with rice wine vinegar, canola oil, and 1 tsp sesame oil
- ¼ cup soy sauce
- 1 tsp corn starch
- 1 ½ cup snow peas rinsed and ends snapped off
- 1 ½ cup roma tomatoes quartered and seeded
- Marinate turkey at least 1 hour or overnight in marinade mix, reserve 3Tb of marinade
- Stir fry turkey in 2 Tb canola oil until lightly browned
- Add snow peas and stir fry 3 min
- Add roma tomatoes and stir fry another 5min
- Whisk together reserved marinade, soy sauce, and cornstarch
- Stir fry together and cook down till a thick glaze is formed
