Hi Mountain

Fireside Beef and Wagon Wheel Pasta 

  • 1lb ground beef 
  • 2 cups chopped tomatoes 
  • ¾ tsp Hi Mountain original burger, or substitute cajun cowboy for more spice 
  • ¼ tsp Hi Mountain garlic pepper rub 
  • 2 cups cooked wagon wheel pasta 
  • 2 Tb fresh sliced basil 
  • 3 Tb fresh grated parmesan 
  1. Brown ground beef in large nonstick skillet over medium heat, about 8-10min 
  1. Break up beef into ½ in crumbles and pour off excess grease 
  1. Stir in tomatoes and seasonings and cook together for 5 minutes on medium heat, stirring occasionally 
  1. Add pasta and basil and toss to combine 
  1. Top with parmesan 

 

Turkey Stir Fry 

  • 1 lb turkey cut into bite-size pieces 
  • Hi Mountain sweet honey marinade prepared with rice wine vinegar, canola oil, and 1 tsp sesame oil 
  • ¼ cup soy sauce 
  • 1 tsp corn starch 
  • 1 ½ cup snow peas rinsed and ends snapped off 
  • 1 ½ cup roma tomatoes quartered and seeded 
  1. Marinate turkey at least 1 hour or overnight in marinade mix, reserve 3Tb of marinade 
  1. Stir fry turkey in 2 Tb canola oil until lightly browned 
  1. Add snow peas and stir fry 3 min 
  1. Add roma tomatoes and stir fry another 5min 
  1. Whisk together reserved marinade, soy sauce, and cornstarch 
  1. Stir fry together and cook down till a thick glaze is formed
